Aloha Kabobs

As a single gal, I only have to worry about cooking for myself. It had been too long since I had made kabobs and I was just really craving some grilled pineapple. I was at Fresh & Easy (a Southern California grocery store) and I found the gluten-free aisle. I was hoping  there would be some sort of magical marinade that would fit in to my paleo regime. I was in luck. I discovered this marinade / dressing that is pretty close! I just needed to use a little to jazz up the beef. I made enough kabobs for a family of 6 I think, but I just put the leftovers in the fridge and sautéed them today on the stove and it was just as good!

Aloha Kabobs
-Beef or Chicken chunks
-Zucchini
-Pineapple
-Mushrooms
-Onion
-Any other Veggies
-Seasoning of your choice or I used the following:
-Pepper
-Salt
-Minced dried onions
-Rosemary
Season the meat chunks and soak in the marinade overnight.
Soak the skewers you’ll be using for about 30 minutes so they don’t burn on the grill
Add randomly your meat and veggies and pineapple all together and grill until its to your desired doneness.
I really enjoyed these and will definitely be making them again!
